HDMI YCbCr can be 10bits or 8bits processing depend on the scaling chipset . RGB is mostly only 8bits processing . So if your DVDp is using 10bits processing , use HDMI YCbCr . However , at the end no matter what you use , it will still convert to RGB(either on display end or DVD player side) . HDMI YCbCr is same as SDI mod , getting pure digital domain to the display . However , if your display/projector is DVI input , then forget it. No matter what you select , it will still at RGB . The picture is very close except on certain scenes like Master and commander , HDMI YCbCr 10bits processing is smooth,no contouring problem like RGB .

YCbCr and RGB are different color spaces in representing digital video signal. Both YCbCr and RGB can be 10 bit or 8 bit, just in HDMI specification, there is no 10 bit RGB (because this requires 30 data pins which HDMI doesn't have; it only has 24 data pins).

10 bit processing means more color depth, therefore as jjj mentioned "smooth,no contouring". But according to HDMI spec, 10 bit YCbCr can only be 4:2:2 while 8 bit RGB is 4:4:4. That means when you choose 10 bit YCbCr, you trade color depth with color resolution. Also please note that 8 bit YCbCr 4:2:2 is used in DVD encoding, therefore both 10 bit YCbCr 4:2:2 and RGB 4:4:4 can be used to represent this video format without any lost.

This ends up that if you have a DVD player that can output YCbCr or RGB via HDMI, you have to see for yourself whether you prefer YCbCr or RGB. Seeing is believing.

100% agreed . I have seen the BenQ7700 and recently BenQ8720 projector using Denon A1XV DVD player hdmi out , the results is very very poor even comparing to component connections . So in conclusion , see it yourself which is better . It all depends to how the display manufacturer implement the digital and analogue inputs too However , my case here is hdmi YCbCr is better than the rest However ,I cannot differentiate the difference while watching DVDs , only test signals (reverse gray ramps) and few movies scenes I can see the hdmi YCbCr is better and cleaner
